Lemon Meringue nest


This weekend was warm and sunny so I wanted to make something that reminded me of the coming spring!  These are mini lemon meringue nests.  The sweet meringue is holding the lemon curd like a little nest.  They are miniature sized so you can eat more than one and not feel guilty in the least!  These are so simple to make but they are so elegant and dainty that they make anything look special.

The meringue is a combination of egg whites, cream of tarter and sugar beaten together until stiff peaks form, pipe into whatever shape you like, and then bake for 2 hours  on a low heat so that they can set.  The lemon curd  is a little more complicated but worth the effort.  For the lemon curd I combined eggs, sugar, butter, lemon juice, and lemon zest on the stove for everything to melt together and mix well then I placed it in the fridge to cool   The results were these little darlings!
